Marshmallow Brownie Cupcakes!

The little boy I nanny for wanted s’mores, but the family had no chocolate bars. His mom came up with this simple idea, which I made yesterday.

It’s so very, very simple- but YUMMY!

What you need
- Brownie mix (prepare as usual)
- Large Marshmallows 
- Silicone cupcake holders (or cooking spray) I made the mistake of using paper holders and they were incredibly hard to get off!!

Directions
- Mix up the brownies and plop a little to cover the bottom of the cupcake holders
- Toss a marshmallow in the middle
- Smush down a little and pour brownie mix over it
- Bake 25ish minutes @ 325*

  1. When I have made chocolate chip muffins I spray the paper cups with a cooking spray--it seems strange but it keeps the chips from sticking to the paper. Maybe that would work here?

  4. So help me out here - I just tried this receipe (looks amazing!). After about 15 min in the oven - they looked just like the picture, but i could tell they weren't done. Checked them at 23 min - and they had totally exploded in the oven and i was just left with a big gooey mess. What did I do wrong???!!

    1. Oh no! Yikes...I'm not sure. I do know that mine puffed up before they kind of fell and flattened out. How high did you fill the cupcake holders? If the batter was too high, that's the only thing I can think of-- that or exploding marshmallows! I'm sorry it didn't work!

    1. From my experience, Marshmallow typical does not freeze well unfortunately! I haven't tried this recipe though.

    2. Thanks, Stacy! I don't have any experience with freezing marshmallows so I wasn't sure. I will say that the end of my batch has been sitting out for about 5 days and they are still yummy as can be!

  7. I substituted the large marshmallow for 3 little marshmallows and they are delish!! I also only cooked them for 20 min so the outside is crunchy and the inside is gooey just like I love them!
